This was my second attempt at making a feta dressing, and it came out so good that I wanted to post it here. It's also very easy to make. The feta dressing I made was rich, thick and creamy due to my craving for creamy dressing. I was about to add more lemon juice, then it came to me. It'd be great with potatoes! One thing led to another as usual and I rushed to the store to get some smoked salmon for this special dish, which is also rather Scandinavian. The combination of potatoes, smoked salmon and feta dressing was just... heavenly. I've been making lots of Japanese food lately since it's New Years and all, but I knew that my husband would love some of his comfort food for a change.
I used Russian Bananas aka finger potatoes. They are great for potato salad. If you are interested in finding out more about potatoes, here's a useful link.
I served this for lunch and it really made the day more fun. A little twist with a simple dish and it was a big success. Hooray for Mama!
Recipe: Serves 2-4 people
Feta dressing (one big jar):
1/2 cup of feta cheese
1 lemon (juiced and zested)
1/4 cup of white wine, apple cider or rice vinegar
2 tablespoons of extra virgin olive oil
2 tablespoons of tahini
2 tablespoons of creme fraiche
1 teaspoon of sugar
2 big cloves of garlic
a pinch of salt and pepper
Put all the ingredients in a food processor or blender and blend together for 30 seconds or so until it becomes creamy. If you like it completely smooth, run it a little longer.
Take the dressing out and put it in a clean jar.
Potato Salad:
2 lbs of Russian Banana potatoes
a handful of mint, chive and dill (total one handful altogether, not each)
smoked chill peppers (optional)
(*I'm not a big fan of dill, so I used fennel leaves instead)
Cover potatoes with water in a pan and 1 teaspoon of salt. Bring the water to boil at high heat, then reduce it to medium high heat. Cook until potatoes are done for about 15 minutes. Drain the water and cool the potatoes for 5 minutes or so in a big bowl. Pour about half a jar (1/2 cup) of feta dressing over the potatoes. Chop all the herbs and mix with the potatoes. Adjust the taste with salt and pepper.
Smoked Salmon:
1/2 lb of smoked salmon
10 capers
1/2 lemon (juiced and zested)
Slice the smoked salmon. Drizzle with lemon juice and sprinkle lemon zest. Sprinkle capers on top.
Serve the potato salad with smoked salmon and you are all set!
I made this potato dish last night. The feta dressing was amazing, combination of feta, tanihi and lemon zest gives a wonderful flavor. Evenybody in my family loved it. This is definately a keeper recipe. Thank you Rika!
